In an interview on the Today Show, JK Rowling revealed what happens after the final book, Harry Potter and The Deathly Hallows.

In the interview she reveals:
Harry and Ron are Aurors, and Harry is the head of the Department. Hermione is is “pretty high up” in the Department of Magical Law Enforcement.
And the three “revolutionize” the Ministry of Magic, making it a “really good place to be.”
